Stomach Fats Reduce Antioxidants' Effects

The protective effects of antioxidants like vitamin C (ascorbic acid) are being reduced by the fats in our stomach, according to a research study by scientists at the University of Glasgow.
...in the presence of lipid the ability of antioxidants, such as ascorbic acid (the active component of vitamin C), to protect against the generation of potential cancer-forming compounds in the stomach is less than when no lipids are present.
The study results, illustrating how diet can influence gastric biochemistry, have been presented by post-doctoral researcher Emilie Combet at the Society of Experimental Biology's Annual Main Meeting, last 2nd of April.
